There’s nothing quite like a stack of homemade, fluffy pancakes to start your morning off right. This simple recipe combines pantry staples and a few basic techniques to create a batch of pancakes that are soft, airy, and golden.

How to Make Homemade Fluffy Pancakes

Ingredients

  • 2 cups flour
  • 3 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 2 eggs
  • 1/2 cup butter, melted
  • 1 cup milk
  • 1 teaspoon vanilla extract

Instructions

I used a electric mixer to make it easier but you can mix it by hand as well.

In a large bowl, combine the flour, sugar, salt, and baking powder. Whisk the ingredients together to ensure the baking powder is evenly distributed for a consistent rise.

In a separate bowl, add the beaten eggs, melted butter, milk, and vanilla extract. Stir well until everything is combined.

Slowly pour the wet mixture into the dry mixture, mixing gently as you go. Mix until just incorporated, being careful not to overmix – a few lumps are okay and will help keep the pancakes light and fluffy.

Heat a non-stick skillet or griddle over medium heat. Once hot, add a small amount of butter or oil to the pan if needed. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until you see bubbles forming on the surface, then flip and cook the other side until golden brown. Each side should take around 2–3 minutes.

Best served warm with butter or maple syrup.

Tips and Variations For homemade fluffy pancakes:

Add-ins: For an extra burst of flavor, sprinkle blueberries or chocolate chips onto the pancakes just after you pour the batter into the pan. The add-ins will melt and cook right into the pancake for a tasty treat in each bite.

Buttermilk Option: Swap the milk for buttermilk to add a slightly tangy flavor and an even fluffier texture.

Keep Them Warm: If you’re cooking for a crowd, keep the pancakes warm in a low oven (around 200°F) while you cook the rest.
